
Bouzigues France - Etang de Thau
Bouzigues was the birthplace of the shellfish-farming business in 1925 and most of its prosperity is still founded on the harvest from the Thau lagoon. When you stop here, this ‘Outstanding Gastronomic Site’ can offer its famous oysters and mussels, either raw or cooked in a variety of ways, in the various restaurants beside the lagoon.
Bouzigues is Languedoc’s shellfish capital and has managed to preserve its traditions and historic charm. Wander through its back streets and along the promenade which has been built alongside the Thau lagoon. The port is made up of two quite separate harbours (one for pleasure boats and one for fishing). There's a floating landing-stage and a quay that is over 100 metres long. It has 93 mooring rings for yachts and other pleasure boats and 66 for fishing boats.
The Etang de Thau (Thau Lagoon) ’s 7,500 hectares make it the largest in Languedoc. It provides 10% of the national production of oysters and mussels, amounting to almost 18,000 tonnes.
