
Salt from the Camargue
From the flooding of the Camargue salt marshes in the spring until the harvest at the end of the summer, the vast stretches afford a kaleidoscope of landscapes.

With its perfectly structured salt tables, the tour of the Salins du Midi is above all a magnificent excursion into the heart of the Petite Camargue, where human activity nestles harmoniously within a wild environment that allows plants and animals to preserve their full and rightful place.
Since the middle ages, the salt harvest has set the pace of life in the City of Saint Louis. The salt marsh owners and harvesters boast a privilege dating back to those times, that of harvesting the Fleur de Sel.
When the Mistral or the Tramontane winds stop blowing, before the autumn rains set in and the warmth of the September sun, small flakes of salt form on the surface of the marshes. The granularity and specific flavour of this tiny treasure of local gastronomy are no longer solely for the pleasure of the salt masters.
The Fleur de Sel, sold in small round tins on which figures the name of the salt worker who harvested it, holds pride of place on Languedoc Roussillon tables. Sublime with barbecued bull ribs, fresh sea bass from the Golfe du Lion or simple garden market tomatoes from the Gard.
At the foot of the Medieval ramparts of Aigues Mortes, the Salins du Midi farms over 7,000 hectares of salt marshes, specifically for the production of table salt sold under the emblematic brand: La Baleine...
