
Nougat and touron
This Limoux speciality is made from white nougat, both tender and melt-in-themouth, and is rich in almonds and pistachios. The recipe, like its origins in the Aude valley, harbours many mysteries, but its reputation has crossed borders.
Turron, another Southern speciality, is another delicious mixture of honey and dried fruits. This variant on nougat, which originates from French and Spanish Catalonia, combines several textures and tastes, tender and hard, with almonds, hazelnuts, pine seeds, and pickled orange peel; sugared Turron is a speciality of Pyrénées-Orientales.
